Kitchen Manager – High Volume Restaurant

About the Role
We’re seeking an experienced, hands-on Kitchen Manager to lead our high-volume culinary operation in Wyomissing, PA. You’ll run the heart of the house in a fast-paced, scratch-kitchen environment. Key Responsibilities

• Operations & Execution: Own all BOH operations during service. Manage the line, and ensure ticket times, food quality, and presentation meet brand standards in a high-volume setting.
• Team Leadership: Hire, train, schedule, and coach a team of 15-25 cooks, prep, and dish staff. Build a culture of accountability, safety, and respect. Conduct line checks and pre-shift meetings.
• Inventory & Cost Control: Manage ordering, receiving, and inventory for multiple vendors. Maintain food cost targets through portion control, waste reduction, and weekly inventory. Assist with menu costing and P&L review.
• Food Safety & Sanitation: Enforce ServSafe standards, health department compliance, and HACCP procedures. Maintain clean, organized stations and oversee deep-clean schedules.
• Menu & Systems: Execute existing recipes to spec while contributing to R&D for specials and seasonal menu changes. Maintain prep lists, par levels, and recipe binders. Partner with GM/Chef on LTOs and banquet execution.
• Equipment & Maintenance: Ensure all kitchen equipment is properly maintained. Coordinate repairs and preventative maintenance to avoid service disruption.

Qualifications

• Experience: 3+ years as Kitchen Manager or KM in a high-volume, full-service restaurant, hotel, or catering operation. 300+ covers/shift experience strongly preferred.
• Skills: Expert line cook with ability to work every station. Strong leadership, communication, and multitasking skills. Comfortable with POS, inventory, and scheduling software like Toast, HotSchedules, or CTUIT.
• Certifications: ServSafe Manager certification required. PA Food Safety certification a plus.
• Physical: Able to stand 10+ hours, lift 50 lbs, and work in hot, fast-paced kitchen. Nights, weekends, and holidays required.
• Extras: Passion for cooking, seasonal ingredients, and developing talent.

Compensation & Benefits

• Salary: $80,000 - $90,000 annually, based on experience
• Bonus: Performance-based quarterly bonus tied to food cost, labor, and guest feedback
