I applied online. The process took 1 day. I interviewed at The Cheesecake Factory (San Francisco, CA) in Jan 2011
Interview
It was very good and informative. I was very nervous so I was but it was ok because they calmed me down and I had prepared well so it all went ok so it did. I was there early so I did not have to panic about being late because I was early. I was seated and felt prepared and after that I was not nervous any more and could talk about my experience as a server in my past jobs.

I interviewed at The Cheesecake Factory (Washington, DC)
Interview
Pretty straightforward, they ask about your experience and how you would deal with certain customers. They ask about problem solving skills and customer service scenarios. They ask what you want from the job and where you see yourself in 5 years.
Simple interview process. Go in person and answer some basic questions with floor manager and they'll let you know if you got the job or not pretty much right there. Pretty sure everyone will get in.
