Fresh Mexican food is the driving force behind this chain. Chevys Restaurants operates and franchises nearly 100 full-service Mexican eateries in about 15 states under the Chevys Fresh Mex banner. The restaurants feature mesquite-grilled beef, chicken, and vegetarian fajitas, as well as such traditional favorites as enchiladas, tacos, and burritos. The chain also serves a selection of margaritas and tequilas for happy hour celebrations. Nearly 70 locations are company-owned, while the rest are franchised. Chevys was formed in 1986 by Warren Simmons, Sr. and his son. It is owned by leading Mexican restaurant operator Real Mex Restaurants.
