Enjoy the Baldor Food article on Max! Supporting Sustainability! My name is Max Cavaleri, and I am the Executive Chef for Restaurant Associates at The New York Times. I’ve always been invested in creating sustainable menus. Growing up in an Italian household, I saw my great Aunt Mary use everything down to the Parmesan rinds to make these elaborate meals that brought my family together. My Jewish mother would take leftover matzah and make sweet and savory matzah brei after Passover. Respecting food and its cultural significance made me want to be a chef, and appreciating the value of your ingredients and the time and effort it took to get them to your kitchen means you don’t waste them. I feel very fortunate that these values are shared both at RA and The Times. It’s been really exciting to see the ways in which Restaurant Associates weighs environmental impact when implementing new programs
In celebration of National Developmental Disabilities Awareness Month, the NYC Mayor’s Office for People with Disabilities (MOPD) and the Consortium for Customized Employment (CCE) hosted a virtual event that honored all of their employment partners. Victor Calise, Commissioner for MOPD, greeted and gave thanks to these employers for their positive impact on the lives of New Yorkers with disabilities. Meet R/A Denise Collins who shares her story (9:14) "RA has been honored to partner with the Consortium for Customized Employment and Job Path going back to 2014 when participants Randy Brown, Back of House Porter and Jonathan German, Executive Dining Catering Attendant joined our team. We are more than honored to have been named Job Path 2016 Employer of the Year as our partnership has been a true win-win. R/A has a strong commitment to diverse, inclusive hiring and retention and creating opportunities for our employees with developmental disabilities. Hiring Job Path participants is smart for business, and is good for our community and the workforce. "
